Best cookies EVER!

Today I made the easiest, most delicious cookies EVER! I got the recipe from a friend who's husband is also here learning to fly Chinooks for the Guard. She pretty much rocks when it comes to making awesome food.

Tess's Mint Chocolate Cookies

Ingredients:
1 box chocolate cake mix with pudding (I used Pillsbury Moist Supreme)
2 eggs
1/2 cup oil
bag of Andes mints

Directions:
Preheat oven to 350 degrees
Mix eggs, oil and cake mix with a fork. It will be thick.
Form into 1 1/2 inch balls, put on cookie sheet, and bake for 10 minutes.
While cookies are still hot, push a single Andes mint in the center, where it will melt.
Remove from sheet and cool. If you want you can use a spoon and spread around the mint after it melts so it doesn't still look like a mint, but that's optional.

THEY ARE AMAZING! I can't wait to try the same recipe using peppermint Hershey Kisses, or even caramel kisses.
